Williston Park approves application for Indian restaurant on Hillside

The Williston Park Board of Trustees voted Monday night to approve an application for an Indian restaurant located at 78 Hillside Ave.

The restaurant, operated by Varli D.S. Hospitality Inc., will take over the same storefront that was previously occupied by Sweet to Lick Vegan Bakery, which closed in May. 

This is the second time Varli has applied for an eatery in the village. In October 2021, the village board approved an application for Varli to open an Indian restaurant on 74A Hillside Avenue, but the plans ultimately fell through for different reasons, one of the applicants said.

The group that will run the restaurant includes Ricky Singh and Varli Singh, who founded Varli Magazine, a publication about Indian food and restaurants. The magazine is part of Varli Media, a brand focused on recognizing Indian cuisine and the chefs who help make it. 

Questions from the trustees mainly centered around hours of operation and the sanitation schedule. 

Singh said that food deliveries will take place before noon on Sunday to prevent any congestion on Hillside and will be conducted with cargo vans, not trucks. He also added that the hours of operation will be from noon to 9 p.m. 

The next Williston Park Board of Trustees meeting will be held on Monday, Feb. 27.
